Lemon Coconut Macaroons

It's National Lemon Chiffon Cake Day! And yup, still Passover. So that means... Lemon Coconut Macaroons!

These are pretty nice, and judging by the reviews on FoodNetwork.com, other people think that they're pretty nice too.

There are so many different recipes for lemon coconut macaroons, and this is my first time making them, so if you have another recipe that you've been dying to make, I'm not stopping you. I'm sure there are better, and worse, recipes out there.

Super simple, too. Start with an egg white. Whisk that for a bit. You could use a mixer for that, but it's not that bad to do it by hand and this way you don't have to clean a mixer.

Mix in salt, sweetened condensed milk, vanilla, lemon juice, and lemon zest. Then add your coconut, and bake! See? Easy!

When you put these on the cookie sheet to bake, make sure you pack them tight. Not the cookies tight together, but the coconut in the cookies tight. There isn't that much sticky stuff holding them together, and they will fall apart if they're too loose. Not fall apart fall apart, but it's just better if they're tighter.

But they are pretty sticky once they're baked. I don't know. I guess from the SCM and the sugar from the coconut.


Recipe (adapted from Paula Deen):

1 large egg white
1/8 teaspoon salt
3/4 cup sweetened condensed milk
1 tablespoon lemon zest
1 teaspoon lemon juice (the original says 1/2 teaspoon)
1/2 teaspoon vanilla extract
1 14-ounce bad shredded sweetened coconut

Whisk the egg white and salt until frothy, about 2 minutes. Stir in the condensed milk, zest, and extracts. With a rubber spatula, fold in the coconut until everything in well combined. Using an ice cream scoop, your hands, or two spoons, place the macaroons onto a parchment paper-covered baking sheet. Bake at 300 F for about 20-22 minutes, until lightly brown.


I got about 20 macaroons from this, and the original says 12, so yay!



Funny story about my rubber spatula, by the way. I was folding in the coconut, and I look down because it's not really mixing. I see this piece of blue rubber mixed in with the coconut, and pick up the spatula. My spatula broke! Like in half! I didn't think that it was broken or damaged, and this isn't a thick thing to mix up. Okay, so maybe not so funny, but whatever. Now I'm down a spatula.
