The Meringue Saga Part V: Apple Pie Meringues

Fall is upon us, so that means boots, scarves, pumpkins, and apples!


Y'all know all about my affinity for meringues, and it's in full swing again!

I wanted to make little meringue basket bowls and put the apples in them all cute and picturesque, but some of them kind of fell over in the baking process. 

But that's ok! They still taste all right! Actually, more than all right. They taste just like apple pie!

I kind of just made this up as I went along, at least for the apple mixture. So if you decide that you despise cinnamon, you don't need it. Just experiment with it! You'll stumble upon something good!


And it's a good thing that I just made spur of the moment without looking for a recipe, since a quick google search shows sparse results for apple or apple pie meringues. I guess I might be the first. Coolio!


Recipe:

Apple Mixture
1/2 an apple (I used Honeycrisp, but really whatever you like works)
1-2 teaspoons lemon juice
splash vanilla
2 tablespoons brown sugar
1-3 shakes of cinnamon
(Add more of anything to your liking)

Meringues
2 egg whites
6 tablespoons brown sugar
1-2 teaspoons apple cider
juice of apple mixture

Apple Mixture
Dice apples and combine with lemon juice, vanilla, and sugar. Stir and let stand for at least 20 minutes.

Meringues
Whip egg whites to soft peaks. Add in brown sugar and beat to incorporate. Add cider and juice and beat again to incorporate.
Pipe onto baking and bake at 325 for 1-1.5 hours. Turn off oven and let meringues sit in oven until it's cool. By then, they should be dry.

I got 16 meringue cups and a large weird boat thing from two egg whites. You could easily get 36 or more meringues if you doubled it.
