Lissa Meal Preps?
Since I haven't been baking, at least I've still been making food (baby steps, right?)
I've been a really big fan of taco bowls and salads. And taco salads. Basically, anything easy that I can make with only a few steps.
For the taco bowls, I brown up some ground turkey with taco seasoning that I make, and then put it together in containers with rice, tomatoes, lettuce, cheddar cheese and avocado. To make it a taco salad, start off with a lettuce base and reduce the amounts of the other ingredients! Easy as pie.
For my salads, I've been a big fan of both pasta and lettuce as my bases. One of my favorite pasta salads is rotini, grape tomato halves, diced red onion, Parmesan cheese and Italian dressing. Combine everything together and refrigerate!
This week I did a salad with pasta, meaning lettuce, grape tomatoes, Mexican cheese blend (what I had on hand) and farfalle. I brought along Caesar dressing in a container to mix in, but I think it would also be good with Italian dressing.
I also recently did some recipes with shredded chicken, which I learned how to make. Super easy too. Just put your chicken breasts into a pot and add enough water to just cover the meat. Heat until boiling then lower the heat to simmer, cover, and let it cook for 15-20 minutes. Once time is up, take the chicken pieces out and pull them apart with two forks to shred. Who knew, right?
