Baked Chicken Sandwich
Baked chicken sandwiches are a classic. I whipped this one up in just about 25 minutes!
I used a thinly sliced chicken breast, dredged it in seasoned flour, egg, and panko breadcrumbs, then baked for 20 minutes! I served it on a kaiser roll with some ketchup and maple bouron pickles that I got from the farmer's market.
These pickles are good, let me tell you. The guy at the farmers market said they were his version of bread and butter pickles. They have a nice slightly sweet, tangy flavor that's so good on a sandwich like this or just as a snack by themselves.
Using a thinly sliced chicken breast is also a game changer because it thaws quickly from frozen and cooks quickly and evenly. I popped this in a 400 for 20 minutes and didn't have to think twice.

Recipe:
1 thinly sliced chicken breast
1 egg
1/4 cup flour
Garlic powder
Salt
Pepper
Cayenne pepper
1/4 cup Panko breadcrumbs
Ketchup
Pickles
Kaiser roll
1. Beat egg in a bowl
2. In a second bowl add flour and seasonings
3. In a third bowl add breadcrumbs
4. Dip chicken breast in flour and coat evenly on both sides
5. Dip in egg, cover both sides
6. Dip in breadcrumbs, cover evenly on both sides
7. Place chicken on a baking sheet lined with foil, bake for 20 minutes at 400 degrees
8. Serve on a bun with ketchup (or sauce of your choice!) and pickles.
