Roast Corn Guacamole

Long time no see, huh?

Anyway, let's just get right into the talk of the guac. I had a hankering for some guacamole so I looked up some recipes and went wild. Not really, this is a pretty normal recipe I think. Except that I added corn. But that's not really that wild so you can decide for yourself.

For this guac, you're going to need avocados, jalapeno pepper, onion, corn, lime juice, cilantro, and salt. I used frozen corn and roasted it in a dry pan on the stove until it was looking a little charred.

Then all you do is open your avocados into a bowl or container, add diced onion and pepper, stir, add corn and chopped cilantro and stir, add salt and lime juice, stir, taste for seasoning and adjust. And that's it.

Super easy, super quick, super fresh. Yum! Would make again.


Recipe:

2 avocados

1/2 cup corn (frozen or fresh)

1/2 onion (red or white)

1/2 jalapeno pepper

1/3 bunch cilantro

1-2 tbsp lime juice

salt to taste


1. Roast corn in a dry pan over medium heat for a few minutes until looking slightly charred.

2. Halve, pit, and peel avocados into a bowl or container. Mash slightly.

3. Dice onion and jalapeno and add to bowl. Pour in corn. Stir to combine.

4. Roughly chop cilantro and add to bowl. Pour in lime juice and salt. Stir to combine. Taste for seasoning, adding additional salt and lime juice as needed.
