Whoopie Pies

Whoopie! Pie. Except it's not pie. Cake? Maybe. Cookie? Sort of. What are you??

Good. That's what these are. The cookie part is cakey, and the frosting tastes like Wilton Buttercream (which to be totally honest is not my favorite). If I were making my totally new, wowzah recipe, I would change the frosting. To something less shortening-y tasting, but these are still good with it. It works. Kinda makes you want to brush your teeth after, but it works. The frosting, not the cookie. The cookies are good!

I guess good is the word of the day. Good to know (ha).

To start, mix flour, cooca powder, salt, baking powder, and baking soda.

Then cream butter and sugar, and add vanilla and egg. Mix buttermilk (I didn't use real buttermilk) and coffee (I used water) in a separate cup, and alternate adding flourstuff and waterstuff. Flourwaterflourwaterflour.

Then make the frosting! Cream butter and shortening, and slowly beat in powdered sugar. Then beat it faster. Then add vanilla and drizzle in corn syrup. Done!

Recipe (from Joy of Baking):

For the cake:

1 3/4 cups flour
3/4 cup cocoa powder
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 cup butter (I used unsalted)
3/4 cup sugar
1 egg
1 teaspoon vanilla extract
1/4 cup buttermilk (here's how to make your own)
1/2 cup lukewarm coffee or 1/2 cup lukewarm water

Sift together the flour, cocoa powder, baking powder, baking soda, and salt.
In a larger bowl, cream butter and sugar until fluffy. Add and beat the egg. Add vanilla and beat.
In a measuring cup, mix together the buttermilk and water/coffee.
Alternate in three additions adding the flour mixture and the water mixture to the butter mixture.
Bake at 375 F for 9-10 minutes.


For the  frosting:

1/4 cup vegetable shortening
1/4 cup (4 tablespoons) unsalted butter, room temperature
1 cup powdered sugar
1 1/2 teaspoons vanilla
1/2 cup light corn syrup

Beat together the shortening and butter until creamy. Gradually beat in the sugar on the lowest speed. Beat on high for 3-5 minutes until fluffy. Then back on low, beat in vanilla and drizzle in corn syrup. Continue to beat until "it looks like soft mayonnaise."

One thing. Before you put the corn syrup in a cup to measure it, spray the cup with cooking spray. The syrup will not stick to the cup!

Okay, two things. Use a good amount of frosting in these. I mean, don't make a frosting sandwich with some cookie topping, but use a good amount. Don't spread it thin. Remember, these cookies are pretty thick. You don't want to eat two cookies stacked on top of each other. Or maybe you do...
