Soft Chocolate Chip Cookies

I got 99 problems but this cookie ain't one. But actually, I made 99 cookies.

I had some soft chocolate cookies a few days ago, and they were delicious! So of course I wanted to make my own. The cookies were like the Entenmanns cookies. They were actually so good! You know, thinking back on it, I should have looked up a recipe for those.

But I have this recipe. So now you should have it too.

Start with flour and stuff.

Cream the butter and sugars then beat in pudding mix. That acts as a sort of preservative to keep them soft.

Stir in eggs and vanilla and add the flour last. But then after the flour add chocolate chips. You could also add nuts. Walnuts would be nice, kind of like the healthy-ish chocolate chocolate cookies I made last year.

I found that these cookies don't have that extreme of flavors. Not that I was expecting them to taste like jalapeno poppers or anything, just that the Toll House cookies taste more chocolate-chip-cookie-y than these. Just some food for thought (haha). 

Recipe (from here):

4 1/2 cups flour
2 teaspoons baking soda
2 cups butter (softened)
1 1/2 cups packed brown sugar
1/2 cup white sugar
2 (3.4 ounce) packages instant vanilla pudding (I used French Vanilla because I'm so sophisticated. Just kidding, my grocery store didn't have normal vanilla.)
4 eggs
2 teaspoons vanilla extract
4 cups chocolate chips (I just used a whole bag of mini chips)
2 cups chopped walnuts -- OPTIONAL

Sift together flour and baking soda. Set that aside.
Cream together the butter, brown sugar, and white sugar. Beat in the pudding mix. Stir in the eggs and vanilla. Add in the flour mixture. Finally, stir in the chocolate chips (and nuts if you're using them).
Bake at 350 for 10 to 12 minutes.
 
The original recipe says to bake on an ungreased cookie sheet, but I wasn't really sure what exactly that was, so I used parchment paper. Yay for being unsure!

I was thinking about why these would be kind of bland tasting, and it could be because of the lack of salt in the recipe. Salt makes everything taste better, so it's worth a shot. Also, you could add some more vanilla. Experiment with it.

If you wanted to make these a bit healthier, you could grind up some oatmeal into a powder and put some of that in instead of some flour. Or use raisins and chocolate chips. Or put whole oats in. It's just the little things.
