The Meringue Saga Part IV: Lemon Meringues
I had a tough time coming up with what to say for this. Hmmmm...

This is tough. But these cookies weren't! There! I got it!
These meringues were super easy, because they're meringues! They were really a spur of the moment kind of thing. And that's okay because you don't need all sorts of crazy ingredients. The craziest thing in these is lemon juice and I used the bottled kind.
And if you needed something quick and crowd-pleasing, here ya go. Especially with how I swirled the color, or tried to, these would be great at a party/baby shower.
Recipe:
2 egg whites
1/2 cup sugar
pinch of salt
1/2 teaspoon vanilla extract
2 teaspoons lemon juice
Whip egg whites until soft peaks form. Add sugar, salt, vanilla, and lemon juice and beat until incorporated. Add food coloring if you want to. Pipe/spoon onto a parchment paper covered baking sheet and bake at 225 for at least an hour or until crisp on the outside.
I actually baked these longer than I said in the recipe. They were still not hard after an hour, so I just turned off the oven and let them sit in it as it cooled. When the oven was back to normal, I took them out.
I got about 40 meringues out of this, which I was happy with. I feel like a lot of the times that I bake, I eat a few of whatever it is, then it just gets old. Not because they aren't good, but because there's so much of them. These are good because they can sit longer and still be alright.
