Cherry Coke Cupcakes

But really, this momentous occasion deserves cake! My baby's two!
I really never imagined Lissa Bakes two years down the road. It seems like just last week I started this crazy thing!

Now on to the cupcakes!
These are the most adorable perfect looking cupcakes I've ever made. Ever.
The recipe is from Brown Eyed Baker and is fabulous as usual!
The batter for this was pretty interesting, and I liked it. Instead of being a thin runny batter like some cupcakes, this one had almost a mousse-like texture to it, not that I've ever made mousse. And I filled the cups about halfway. I was sort of worried about them being overfilled since that's something I've been known to do, but...
The actual cupcake part came out of the oven looking like professional beautiful perfectly cupcake shaped cupcakes! I was so proud of myself!
Then I used my Wilton 12 to hollow out some of the cake. And some of the hollowed cake came out in the tip but most of it didn't so I had to stand there like a vulture picking out the middles with the end of a spoon. Then I ate the middles. Like a vulture. Can we just think about that image for a sec?
Then I filled the perfectly hollowed out perfect cupcakes with a cherry and some jell from the cherry pie filling! Too cute!
Now at this point, the original says to put on some glaze, but I didn't know if that would make them sickly sweet, so I put it on half of them and left the other 10 plain. But I did a little experiment to see how those 10 turned out and the glaze dried and just sort of became part of the cupcake which I liked so I added it to the rest of them.
Then I whipped up some cream and piped it on with my Wilton 1M and topped them with a maraschino cherry (which I adore, by the way) and they were SO. CUTE. Omigosh they are adorable!
Unfortunately, I didn't get a lot of Coke flavor from these cakes. They're a really good chocolate cupcake with a hint of something else, but I was kind of hoping for them to have an in your face distinct Coca Cola flavor. The glaze helped a little but it still wasn't overwhelming. Maybe if you put some in the whipped cream? That would probably ruin it but I'm not really sure where else to incorporate it.
Normally I don't like whipped cream as frosting but these cupcakes are super spongy/airy (probably because I creamed the butter to oblivion) and the whipped cream works really well with them.
Recipe (adapted from Brown Eyed Baker):
1 1/2 cups all-purpose flour
3 tablespoons cocoa powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup granulated sugar
1/2 cup unsalted butter, at room temperature
1 egg
1/2 cup buttermilk
3/4 cup Coke
1 1/2 teaspoons vanilla extract
1 can cherry pie filling (make sure they're whole cherries)
3/4 cup powdered sugar
2 tablespoons Coke
1 cup heavy whipped cream
2 tablespoons powdered sugar
Maraschino cherries for garnish
Sift together flour, cocoa powder, baking soda and salt. In a different bowl cream sugar and butter until light and fluffy. Add eggs and beat again. In a measuring cup (Pyrex type) stir buttermilk, Coke and vanilla. Alternate adding dry and wet ingredients to the sugar-butter, starting and ending with the flour. Don't worry if it looks curdled when you first add the liquid! Pour batter into your cupcake pan and bake at 350 for 18-20 minutes.
When cool, use a piping tip or paring knife to gently remove little parts of the middles of the cupcakes. Fill with one or two cherries and some jell from the cherry pie filling. Spoon on some glaze and let it absorb for a few minutes.
At this point I stored the cupcakes because I didn't want whipped cream sitting out in room temperature. You can frost them now or later.
Whip together your cream and sugar and pipe or spoon on to the tops of the cupcakes. Garnish with a cherry if you so desire!
The original recipe said it yields 12 but I got 20, so I call that a success!
