Banana Brown Sugar Muffins
I made muffins! Muffins muffins muffins!
And let me tell you, holy moly are these some delicious muffins!
They're banana muffins with a brown sugar topping and they are the most delicious moist muffins I think I've ever had! I guess I didn't know this before but the banana really adds to the moisture of your baked goods in a similar way to oil. The more you know.
I used this recipe from My Baking Addiction and it is definitely on my short list of easy and delicious things to bake. I actually had been craving these muffins for a few days, then it was around midnight one night and I really really wanted to bake muffins! So I did.
Just kidding! I didn't bake these at midnight! No, I made them the next night starting around 10:30! And because I didn't have overripe bananas, I had to ripen them in the oven for 30 minutes (going off of this wonderful post from The Kitchn). So by the time I was done with the whole ripening and baking process, it was basically midnight anyway. So I guess mission accomplished?
In other news, I got a new computer! A laptop and I'm totally in love with it and it's the prettiest computer I've ever seen! It's the Lenovo Yoga 2 Pro and I'm not going to link it because then you would see the price and that sort of makes me cringe. So google it for yourself!
Also, I want to tell you guys a funny story. Or, I think it's funny. Kind of sad. But not like aww sad, like pathetic sad. Anywho. I was in Ulta the other day and I wanted to get a new lipstick so I was looking at the NYX area and I saw a nice, nude-ish looking one that I thought would be cute on me, but then I thought nah, it might be too frosty looking. So I keep browsing and I come across a shade called chic. That looks pretty I thought to myself. So I bought it. And I get home and swatch it on my hand with my other pink lip products (La La lip gloss and Parfait lip balm) and they are the. same. exact. colors. Like, what? Excuse me? Yeah, you read correctly. I now have three different lip products in the same color. I told my friend this and she was like Well, I guess you know what you like! I guess I do.
In interesting video news, I saw this one about "the scientific way to cut a cake" and it made me sad because they ruined the pretty cake and cut it really weirdly. But you should watch it anyway!
It actually took me a pretty long time to get around to taking pictures of these since they were so dang good I just wanted to eat them and not take pictures so I could taste their delicious goodness!
But forreal forreal y'all, these muffins are da bomb! Make them!

Recipe (from My Baking Addiction):
Muffins
1 1/2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3/4 teaspoon cinnamon
3 bananas (overripe and mashed)
1/2 cup granulated sugar
1/4 cup packed brown sugar
1 egg
1/3 cup vegetable oil
1 1/2 teaspoons vanilla
Topping
1/3 cup packed brown sugar
2 tablespoons flour
1/8 teaspoon cinnamon
pinch of salt
1 tablespoon butter (cold or room temperature)
Whisk together flour, baking powder, baking soda and salt in a large bowl and set aside. In another bowl mix together mashed bananas, granulated sugar, brown sugar, egg, oil and vanilla. Pour wet ingredients into dry ingredients and mix until just combined. Pour into prepared muffin tins.
In a small bowl mix together sugar, flour, cinnamon and salt. Add butter and cut it into the mixture. It should get grainy and the largest chunks should be about pea size (no larger than a fingernail). Spoon hefty amounts on top of all the batter in the tins.
Bake at 375 for 18-20 minutes.
