Chocolate Chip Toffee Cookies

After a very long hiatus, I'm back (temporarily). After much begging, pleading, searching, and waiting, here's a new post for ya.

I made cookies! I was chillin on my couch, watching netflix, and I wanted cookies. So I found a recipe and went to work. This recipe to be specific. However, we only had a scant cup of chocolate chips left, but we did have toffee bits, which I'm pretty sure are from this post, but that's only mildly worrying. So in went the toffee bits. The more the merrier.


These cookies are really good! They're a classic, but a classic for a reason. They're crisp on the edges and chewy in the middle. And if you keep a slice of bread in the container with them, they'll stay soft for a while. At least that's what I read on the internet so I believe it 100 percent.


Recipe (adapted from All Recipes):

1 cup butter
1 cup white sugar
1 cup brown sugar
2 eggs
2 teaspoons vanilla
1 teaspoon baking soda
2 teaspoons hot water
1/2 teaspoon salt
3 cups flour
1 cup chocolate chips
1+ cups toffee bits

Cream together butter and both sugars until fluffy. Add in vanilla and eggs, mixing after each one. Dissolve baking soda in hot water and to butter mixture. Beat baking soda paste and salt. Stir in flour. Add chocolate chips and toffee bits and mix until evenly distributed.

I got a whole lotta cookies from this recipe. At least 60. So I think that if you wanted to, this recipe would be super easy to cut in half for a more reasonable amount of cookies. Unless you wanted 60+ cookies to snack on, which I know I always do.
