French Toast

 I love French toast! Does anyone else love French toast? I know I do! All I need is some hash browns and this is my all-time favorite breakfast. Are you taking notes?

I'm coming at you with Gilmore Girls recipe #5, and I think this may be my favorite. It's so simple yet so good. I also am a big fan of any recipe that is easily scalable, which this definitely is.

The recipe in the cookbook is for 2 servings, so I cut that in half and will reflect that down below. All you need is an egg, a splash of milk, and a splash of vanilla. Whisk that up with a fork then dip your bread on both sides. I counted to 10 before flipping. Then hold up the bread so the excess drips off and fry in a pan with some oil! 2 minutes on the first side, 1 minute on the second, then you're ready to go.

Are you ready to go make this yet? I just had two pieces and I'm ready for some more! Not going to do that just yet though or else I will end up eating through all of my bread.

And what kind of bread did I use? Chocolate chip brioche, of course! You can use any kind of bread for this... the recipe suggests white, egg, or cinnamon.

I appreciate that this recipe keeps the egg mix simple. No cinnamon, nutmeg, any other weird spices that aren't necessary. Sorry mom.

Recipe (from Eat Like a Gilmore): 

1 egg

1/8 cup milk

1/4 tsp vanilla

1 tbsp olive oil

2 bread slices (white, egg, cinnamon, or chocolate chip brioche)

Butter, maple syrup, strawberries for serving


1. Crack egg into a medium bowl. Pour in milk and vanilla. Using a fork, whisk until all are combined.

2. In a frying pan, heat olive oil over medium-high heat.

3. One piece at a time, dip bread into egg batter and let soak for 10 seconds. Flip and soak other side for 10 seconds. Hold the battered piece over the bowl so that excess batter can drip off.

4. Place bread in frying pan. Cook for 2 minutes. Use a spatula to flip. Cook other side for 1-2 minutes, until bread is brown. Remove from pan and plate. Repeat with remaining bread.

5. Serve with butter, maple syrup, and strawberries.
