Strawberry Mango Sorbet
Sometimes you just do stuff. And sometimes that stuff doesn't gel. But sometimes that stuff does gel. And this sorbet gels with me.
It's summer again! So that means break out the ice cream maker, cause we're cookin! Or not...
I looked at a lot of different recipes for this sorbet, but it seemed that all of them had something that I didn't like, so I kind of just winged it and made my own! Yay for not following a recipe, but for following your heart. Awww!
That was cheesy. Forgive me.
Ok, so to start, make a simple syrup. For this, I did 1 cup water and 3/4 cup sugar. You could get away with doing a 1:1 ratio, though. I probably will next time.
Then, cut up your fruit. I ended up using a little more that 2 cups strawberries and about 2 1/2 cups mango. And the juice of 1 1/2 limes. But that's only because I had a lime half in my fridge and I don't think it gave that much juice anyway. I microwaved it before I squeezed it, is that ok?
Blend it all together. I did the fruits first, then the liquids, because the fruit filled my blender all the way.
Chill your sad-smoothie-type-thing for a little bit. I only did an hour, but you could chill it overnight if you wanted, I guess.
After that, put it in your ice cream maker and make some sorbet! If you don't have an ice cream maker, you could probably do a granita type thing and fork it.
Once it's ice cream made, put it in your freezer until it sets all the way.
Recipe:
1 cup simple syrup
2 cups strawberries
2 1/2 cups mango
juice of 1-2 limes
Blend simple syrup, fruit, and juice together. Chill for an hour minimum. Freeze in an ice cream maker per manufacturer's directions. Chill in freezer until set.
If I didn't say it already, this is some good sorbet! Like wow! And it's easy! I know that I'll be making this again! And if I don't make this one again, I'll make this. Can you say yum?
